David Chang: Empire Buildling

David Chang is everywhere.  In Details Magazine's list of the top 10 cookbooks of the year one is the Momofuku Milk Bar cookbook and another (Joe Beef) has a forward by him.  On Monday I saw that Milk Bar had opened up a store in South Williamsburg at 382 Metropolitan Street (closest train station is Marcy Ave).

Every since I was told that the reason that Momofuku doesn't serve coffee or tea because they don't want people to linger I realized that apart from his genius with food what really made Mr. Chang was his business smarts.  At this rate in 10 years he'll be giving McDonalds a run for their money.  And if he continues to use handcrafted, local, organic ingredients then I say: go for it.
