Every since I was told that the reason that Momofuku doesn't serve coffee or tea because they don't want people to linger I realized that apart from his genius with food what really made Mr. Chang was his business smarts. At this rate in 10 years he'll be giving McDonalds a run for their money. And if he continues to use handcrafted, local, organic ingredients then I say: go for it.
