I love Cabbage and as a locavore want-to-be, it is the only crunchy green vegetable that is local and around for most of the winter months here in NYC. I made a slaw with it recently using persimmons and pomegranate (which are in season in California so see I've already broken down...) rice vinegar and lots of fresh ginger; it was the hit of the dinner.
