Black Truffle Omelette

The second night we were in Bordeaux Paulette one of our amazing hosts here invited us to her house where her wonderful husband Bernard made us black truffle omelettes, from black truffle they had obtained in nearby Perigord. In addition to black truffle omelettes there was a cheese course, salad and of course lots of bread and a very tasty store bought raspberry frozen mouse cake. Our other amazing host here in Bordeaux Charles joined us with his wife Elizabeth who has a beautiful voice and sang Neil and a Spanish love song, as we sat savoring cheese at the end of the meal in Paulette's and Bernard's huge back yard. Paradise! Oh and did I mention we drank a lot of delicious red wine from, yes you guessed it, Bordeaux.
