Grilled Mackerel, Horseradish and Gooseberries

I love this guy's accent and affect very casual and flip. Particularly like how he's not so specific about measurements. You can use pre-made horseradish strained for the saw if you can't find the root to make fresh.

Gooseberries are now at the market and whole Spanish Mackerel is readily available.
Also if you are bone phobic I think this could done with fillets which you could grill as he does with the whole fish.

It's pretty winning!

Baked Mackerel with Beets, Boccacini and Cherry Tomatoes

For some reason I have never been very successful cooking Mackerel, so I avoid buying it,  that and I find it really has not fridge life, so you have to buy it and cook it on the same day or it's in the garbage.  This dish looks easy, delicious and pretty enough to serve for guests.

I know I keep saying this, but it still amazes me how the Brits have become such powerhouses in the kitchen, it's a far cry from canned peas in a Styrofoam cup!  Which is something i saw in take away shops often when I lived in London for a month in the late 80's.

This is from the Guardian.co.uk one of my favorite sites for news and food.
